Recipe: Re-made Bread Pudding

Breakfast or dessert, this recipe is good at all times of the day.

Recipe: Banana Chocolate Chip Bread Pudding

This recipe is good enough for breakfast as baked french toast with fruit, or serve with ice cream and it is easily a healthy dessert. This bread pudding is great for all audiences and easily tailored to your taste preference.

I highly recommend using Challah bread (at least one loaf) or a variety of any bread/baked goods you may have left over.

Also, if you don’t have time to let the bread fully dry out, than just decrease the recipe by one egg and one cup of milk. Make sure that the bread soaks in the milk and egg mixture for at least one hour.   

Ingredients:
Bread of your choice (or variety of breads/muffins)
2 - 3 Cups milk (I went with vanilla almond milk)
2 small containers Greek Yogurt (Chobani is my favorite, and I used one blueberry and one honey)
4 Egg whites
3 Tbsp Cinnamon
1 or 2 Bananas
Dash of salt
Optional: 1 cup chocolate chips, ½ cup blueberries/dried fruit
White or Brown Sugar to taste if you desire.

Materials:
1 Large spoon
1 Small bowl
1 Large bowl
1 Large Baking Dish
Optional: foil

Directions:
               *Preparation: Cut bread into strips and/or cubes and spread on a cookie sheet to let dry-out.
               *Night Prior to Baking: Mix eggs, 2 cups milk, vanilla, yogurt, cinnamon and mashed banana(s) in a small bowl. Place bread pieces in large bowl. Pour mixture in small bowl over bread in large bowl and toss the contents around so that mixture is fully dispersed. If extra liquid is not present in bowl, pour more milk in. Cover large bowl and place in the refrigerator over night.

  1. Preheat the oven to 375 degrees. Grease a 13 by 9 by 2-inch pan.
  2. In another bowl, mix and crumble together brown sugar, butter, and pecans.
  3. Pour a third of the bread mixture into prepared pan. Sprinkle brown sugar mixture over the top.
  4. Repeat step 3 until all ingredients are used.
  5. Bake for 45 minutes -- 1 hour, or until set. Remove from oven.
  6. Serve warm.
